We don't know much about how Han would've been in George's version I think. He'd be working for the New Republic in some capacity, I mean he's married to Leia. He owns a shipping company in the Disney canon which is where his ship the Ervana in TFA came from. So I think the idea he'd gone straight in that way but then rejoins the New Republic's navy to help fight the Imperial Remnant works. Especially if his kids are involved and there's personal stakes.
As for the uniform, I think he looks way cooler in a trenchcoat but he has worn alliance fatigues before be it on Hoth or Endor. And he's worn a navy uniform in Legends so I wouldn't be against it in small doses, but it shouldn't be his main look. Leia also had a really basic uniform in TFA that didn't suit her. Her Last Jedi look suited the character more.
