I also didn't say "some are made of dust," just that a monster made of fire would obviously not bleed if you stabbed it.
And again, there's a "more logical" alternative where monster "dust" in Deltarune is just a euphemism for cremation ashes but I think that's lamer than monster just turning to dust anyway (there ought to be some meaningful distinctions between monsters and humans and animals).
