If you took out Quel'thalas you would not only lose the Sunwell but also everything the blood elves siphoned to survive, such as local wildlife or the remaining ruins of their society that still contained some magic. Blood elves already lost 90% of their population to Arthas when he made the Dead Scar. Destroying Quel'thalas outright would leave 10% of that 10% remaining, and without any source of magic they would just become evil magic-draining wandering gypsies again. This was what they were originally until BC (specifically in the old RPG prior to them being playable), they were assisted by Velen and the Naaru and the Sunwell was restored.
Now the idea of playing as a wandering elf-gypsy who mistrusts everyone and drains mana like a vampire is cool, and I would absolutely play as one, but at that point you could never redeem them a second time. Their Alliance equivalent (Quel'dorei) still despises them and would kill a blood elf on sight, as would all their friends. There is no Sylvanas Windrunner around anymore to vouch for them anymore. And even then, why would they remain in the Horde if they couldn't help them protect the Sunwell and there's absolutely no replacement anywhere? The best they could do is integrate into the Nightborne and siphon their Nightwell, but that's a Nightwell, not a Sunwell.
