I've waited tables and been a janitor so speak from experience
Being a janitor is more physically tiring, but once you learn the lay of the land and get into a routine it's very straight forward desu (though some days are worse than others in terms of messes and accidents etc.)
Waiting tables is overall more stressful, particularly at peak times and when having to deal with difficult customers (and getting the hang of carrying a lot of plates), but if you have a decent team and camaraderie it's also perfectly manageable
