Yes, you actually get way more colors and tones with HDR. For example look at this video, right at the beginning there's a pink sign with white letters. If you're not using a proper HDR display you'll only see the white, and the same goes for the reflections and text.
I took this screenshot on my HDR monitor and then converted it to SDR. Even then, a lot of the color and visual effects get lost since SDR just can't hold as much data as HDR. But still I think it's one of the best ways to show how much of a difference HDR can make.
Anyone saying that it only affects saturation and/or contrast is either extremely ignorant on the topic or is just trolling.
