So? She didn't have to be referenced or mentioned. Qui-Gon Jinn wasn't referenced or mentioned in the original movies either. Characters also exist, live, and talk outside of what is shown to you in the movie. Their lives don't suddenly stop when the camera isn't rolling. Nothing ever said or implied Anakin couldn't have one. The only pre-requisite for having an apprentice is being a Jedi Knight. In A New Hope, Obi-Wan himself said, "I was a Jedi Knight, the same as your father." And in the same scene it was established that he had a pupil. So, logically, there is nothing to say Anakin, a Jedi Knight, couldn't have a pupil of his own, too. There was a reason why an apprentice was assigned to him.
