I am pretty new to cooking steaks. I am also relatively inept when it comes to cooking but I am trying to learn. I keep fucking up steaks. I usually buy a thinner cut but I can never seem to not hit well done. I do the cooking and cut the steak and see like no pink. I see a faint faint hint of pink. But the steak is basically well done. But it also doesn't feel well done texture wise though which is weird. What am I doing well? Its edible and taste good to me. But if someone asked me "Yeah I want my steak medium" and I had them my steak, I am sure they wouldn't like it maybe. Its not tough or anything though which is weird. Is it because I marinaded and froze this steak before cooking it? I just want to learn enough that I can control the kind of steak I want. Rare, medium, etc. I want to say the steaks I got were less than an inch in thickness maybe?
