I am pretty new to cooking steaks. I am also relatively inept when it comes to cooking but I am trying to learn. I keep fucking up steaks. I usually buy a thinner cut but I can never seem to not hit well done. I do the cooking and cut the steak and see like no pink. I see a faint faint hint of pink. But the steak is basically well done. But it also doesn't feel well done texture wise though which is weird. What am I doing well? Its edible and taste good to me. But if someone asked me "Yeah I want my steak medium" and I had them my steak, I am sure they wouldn't like it maybe. Its not tough or anything though which is weird. Is it because I marinaded and froze this steak before cooking it? I just want to learn enough that I can control the kind of steak I want. Rare, medium, etc. I want to say the steaks I got were less than an inch in thickness maybe?

Here's something I did when I was young and was learning my way: really hot pan (obviously), two or so minutes each side. Throw butter in the pan and baste. Transfer it to a preheated oven for about 12 minutes, then rest for five or so. Try it once, given your apparent failed attempts in the past

Get thicker cut steaks, use a thermometer, maybe try cold searing if you have a nonstick pan

No technical reason, that's my point. When I was doing it when young, I found it easier to get a tender steak that way. Now it's more by instinct

what do you by "but". it's because you're buying thin cuts that that shit is winding up well done. what do you think happens when heat is quickly passed through a thin slice of meat?

Since i got one my steaks are always perfectly cooked. I even cook on a grill outside.
