People would probably be more accepting of this if it were done as actual character development, not simply siphoning out that aspect of her character.

Having her realize that Sonic just isn't interested in her the way she is and growing up from it, deciding to put her energy into other things that bring her happiness if chasing after Sonic will ultimately be fruitless.

Sonic Frontiers with its heavy emphasis on character introspection and the cast evaluating their own relationships with Sonic would have been the perfect time to do this but by that point everyone already could tell trying to distance Amy from being Sonic's self-appointed girlfriend was already in effect.
