I was a doorman for about seven years. First off, bouncers don't fight- you deescalate, escort and maybe restrain someone until cops arrive. How often did I have to break up a brawl or fight? Maybe once every three months in the shittiest bar I worked at. Most of the fights in bars are guys trying to protect their ego.
Over seven years I only ever threw a punch four times. Once when some parolee tried to stab an off duty chief of police. Again when a guy got jumped in the parking lot by a dozen guys and we got jumped trying to help him. Then again when the bartenders ex got thrown out and said he was going to his truck to get his gun and coming back. Finally when a drunk girl jumped on my back and almost clawed my eye out. I threw her over my shoulder and punted her in the ribs.
The pay is decent but it's glorified customer service except the customers can throw hands and the hours are dogshit.
