Because Yoshi despises everything that came before he took over the game. All of that lore that's been systemically raped and destroyed was pre-ARR lore. The Twelve, Garleans, Ascians, Eorzea, etc. All of that was pre-Yoshida FFXIV. It's not just Yoshi P, it's Ishikawa, Hiroi and the rest of the current writer's room. This wasn't THEIR game, this wasn't THEIR world, these weren't THEIR characters. They want to scrap everything that came before ARR and remake the world as their own. And we've seen the fruits of this since Shadowbringers when Ishikawa was given full control over the writing and it's only gotten worse.
The WOL went from just being some random adventurer with Hydaelyn's blessing to being the reincarnation of an asican who was also best of friends with Emet Selch (one of Ishikawa's OC donut steel's) and even though the Ascians lived in a perfect peaceful world they had a special role for somebody who's job was just going around adventuring (in a world without conflict and thereby without any need for adventuring btw), specificially so we can give a cute and funny little reasoning for why the WOL loves adventuring you see, oh and now we got our old past-Ascian self's funny summon crystal that let's us summon exactly 7 other adventurers to help whenever it's time for an 8-man Trial (why Azem needed such a tool in a perfect peaceful world? Don't think about it). This is literally bad fanfic-tier writing.
But now that they've finally killed every shred of this game's worldbuilding, they've evidentally had absolutely no idea what the fuck to replace it with. Their's no conflict left at all in the world, every single villainous faction has been wiped out, there's not even some shady unground criminal organization that could cause problems. Nothing, literally fucking NOTHING is left.
