8 also removed Lakitu boosts, made Lakitu pick you up way faster, reduced other hit reactions like getting hit by NPC cars, removed wheelies, standing turbos, jump drifts, made item boxes respawn instantly so you can no longer tactically steal them, added a bunch of invisible walls to prevent shortcuts, removed items that require skill like the cloud or the tanuki tail, generally made drifting even easier and tracks wider (all those lazy phone tracks), etc.
Don't start me on what they did to Pikmin 4.
