Personally, I've been studying the way of sharpening knives for the past 5 years. I wake up in the morning, take out my 360 gradient whetstone, and start running my sword over it back and forth, over and over again. Until I feel satisfied. It's not something that can be measured in numbers, you just need to feel it, if your ancestors were warriors you know what I mean. Then I go up to gradient 600; 1000; 3000, sometimes even higher, and then the time comes for polishing the sword until it's sparkling like that dude from Twilight.
