If you used an Epsilon model you wouldn't get the oversaturation problem, but Epsilon models have less color depth and contrast than Vpred models.
Pic related is a test showing the effects of CFG Rescale on the NoobAI Vpred model. The rescaler has a value between 0 and 1, with 0 having no rescale and 1 being the most rescale. I usually use around 0.7.
Although Vpred models require a bit more effort to get setup, I think it's worth it because you can get better lighting and shading and especially for dark scenes Vpred models do them a lot better.
