There are a bunch of regular tracks you do a few laps around which is how Mario Kart has been for its entire existence. The new game has an open world island where those tracks are connected by mostly straight highways seen in pic related. There's an entire battle royale esque mode dedicated to 10 minute 6 "lap" races using those highways, but Nintendo makes you jump through hoops just to do the traditional 3 lap races. What people want is already in the game, but Nintendo just limits your access to it for no good reason. People found an exploit where randomly selecting a track would get you 3 laps, but Nintendo patched it out like a week and a half after launch.
