Sonic 2 already had one of the best rewards for collecting all the Chaos Emeralds being Super Sonic.
Sonic 3 and Knukcles gives you more playable characters with unique gimmicks that ALL get super/hyper transformations (except tails can only go hyper for some reason). HYPER mode you say? Yes because once you get the chaos emeralds, you get the super emeralds which lets you transform yet again into an even more overpowered state. No other game of this era had a reward system like this.
Sonic 3 and Knuckles also has tons of stages, act 1 and 2 have different music, some of the best video game music ever made at that (developed alongside THE Michael Jackson), of which the stages have huge amounts of verticality which means a ton of hidden secrets and alternate paths to take. And instead of there only being one boss at the very end, you now have a new mid-boss for each stage after Act 1, then a proper Robotnik battle in Act 2, for EVERY stage.
Not to mention the game tells a cool story but it tells it visually and through events that happen as you transition between the acts and stages. never wastes your time with stupid dialogue boxes and the story never overstays its welcome, but when you get to the end it's pretty crazy.
Not to mention Knuckles entire "path" plays completely different than Sonics and has access to areas that none of the other characters have. And that's without even getting into the beautiful spritework, the colors, the parallax scrolling and detailed backgrounds. All on a cartridge...well two cartridges stuck together which is cool in its own right.
On top of all that you get fucking SAVE FILES that don't require some shitty password to be entered. This was not the norm at the time. A game that saved on its own and allowed you to jump back in whenever you wanted was huge, and you had a ton of save file slots which led to me "100%ing" the game with each character, on multiple slots. It's just a great fucking game period. Play Sonic Air.
