In addition to the fact that it's a popular, famous (or infamous) show, I think one reason Eva is a font of weight gain content is that all the characters are so interesting.

Weight gain scenarios are a lot more fun when you have complex, interesting characters to insert into them. Not only that, but all of NGE's characters have some form of damage, some form of flaw and trouble to their personality, and it's not hard to twist those flaws into scenarios where they'd start putting on weight.

And everybody has a somewhat DIFFERENT flaw, a different personality, so within the show itself there's a lot to explore and a lot of different weight gain scenarios to play around with.
