I think its because Himari doesn't have as much experience. Running that shop together is more a learning venture for both. Himari seems to mostly booksmart, but not huge on looks. While Ciel is proven to know how to make and present her foods, and able to seemingly go full Alton Brown, where Himari just has recipes at best.
