Update:
I measured the voltages coming from the harness for the fuel pump sensor and temperature sensor and everything was fine. I then took the fuel pump assembly back out, measured the resistances for both sensors, and got a totally normal result. I guess everything is fine, even though the light's on?
I did initially swap two ground wires on accident and tested the car with the wrong wire configuration before fixing the problem, so it's probably just that. I'll try reseating the connectors just in case that's the issue. Or maybe I just need to drive the car around until the ECU gets used to the minutely different readings
