I think a proper self insert character is difficult to do without the game being very dynamic and complex. Closest I can think of would be those old CRPGs (they're not Japanese though) where they give you tons of options that actually affect the story and your relationships, but even that is still limited. It's no surprise Japanese games don't have proper blank slates either, because it's just too difficult.
