I think a redeemed Cozy would have a place in Canterlot Castle, as an advisor or military strategist for Celestia. She's heartless and pragmatic, allowing her to make decisions without getting hung up on the people involved. But redeemed as she is, she also wouldn't just throw away lives on a whim; if for nothing else, than the understanding that every life lost weakens her strategy and future options.
I think the best Cozy redemptions would be where she's only "lightly" redeemed. She's still in some ways a bad pony, but she's now a bad pony who acts decisively in the interests of the peoples she's come to care for. Plus, a military role leans into the chessmaster feel she puts out, while being something more practical and less on-the-nose.
An older Cozy—teenager, or mare—would look really sharp in a prim, shiny military uniform and hat, her curls perfectly formed and formal. I can see her frowning down thoughtfully at a map of battle plans, reddish eyes quietly rolling over the parchment.
