Tamers Fluttershy is better than canon Fluttershy because she's the only member of the Mane 6 that is a completely different character from her canon archetype. Tamers Flutters is more assertive, and mean. In fact Tamers Fluttershy is just Fluttershy when she was turned mean and their personalities changed and she's better for it.
All the other members of the mane 6 are basically the same as their canon counterparts except made more extreme and at times meaner in certain ways with some shifting of dynamics.
But overall Tamers Twi, Rarity, Rainbow Dash, Pinkie Pie, and especially AJ pretty much match their canon counterparts but as I said just more extreme in certain ways, made meaner, and given certain fetishes.
Also yes Tamers Rarity x Tamers Fluttershy could be a cute ship.

The thing is. Fluttershy was never actually truly "kind". She was just timid and agreeable.
If Flutters never grew up with self esteem and confidence issues she would have grown up to be a complete and utter bitch guaranteed.
Meanwhile even when Raritiy was a filly she was making stuff for other ponies, selflessness (within reason) is ingrained in Rarities character.
