Fantasy and 40k approach grimdark themes differently. WH Fantasy is still a high fantasy with heroes and villains, respects its roots and subject matter, while having crazy nonsense power metal album setting. Humor is sincere and cheeky, many characters, especially villains, are very cartoony. Human empire is medieval shithole, but they genuinely want to live there. It's like Brothers Grimm writing Lord of the Rings.
40k is a parody, satire yet characters never acknowledge this and play it straight. The funny comes from everyone talking about Emprah and stuff very srsly all the time, while millions die every second in inhumane conditions. It's much more a macabre dark comedy. irl fans talking about how much they agree with Imperium and wanna be guardsmen also adds to humor.
You can see this in Vermintide vs Darktide. One has funny rats eating ppl, dwarf songs, elves being assholes for no reason, saltzpyre ranting about sigmar etc. In other you are prisoners fighting until you die, being a mage makes you insane, everyone plainly doesn't like you and grounded characters being incredibly cynical and snarky all the time.
