I don't think anyone brought this up yet but doesn't it seem peculiar that Majogami already has a Steam version confirmed despite there not being a confirmed date for it yet there's no mention of a PlayStation or Xbox version at all?

Yes, but not quite. From what I remember they only confirmed additional platforms for an upcoming game like LAiX1, GV3 and Umbraclaw when they had a release data in mind for those platforms. The fact that they're willing to share a TBD date for Steam but not for the rest of them makes me think they're not even planning to release Majogami on PS or Xbox at all. If that's the case then the game might end up being spicier then it first seemed, though considering some of the already revealed character designs I wouldn't be that shocked.
