Saber v. Kojirou was plain fun, and the fact it's the odd one out your entire list makes it all the more cooler.
Part of me wishes HF's ending included something like SLH-lite with Shirou v. Saber, and a Rider v. Hassan rematch featuring the latter with a third Noble Phantasm to spice things up. Both Assassins are probably my favorite FSN servants
