Onigiri are alright, but that's the issue, they're really "just okay", not craveable and delicious. They're the Japanese equivalent of a bologna sandwich, they're a lunchbox staple for school or work, but not really something people go out of their way for.
If you really want to drum up business, it has to be more exciting and delicious. Something fried, meaty, crunchy, spicy, bright colors and big flavors. Something you could smell from down the block, ideally.
Maybe get a flat top propane grill and make cheese-crusted breakfast burritos. Just use powdered scrambled eggs like hotels do, and pre-cooked brown-and-serve breakfast sausage, but when you're on-site start frying up the bacon. That'll be the smell that draws people in. Bring an air fryer and pump out some frozen hash browns. Spread out a layer of shredded cheddar and lay the tortilla down on it so the outside gets a cheese crust, then fill the burritos with bacon, egg, american cheese, sausage and potatoes. Charge $8 each and make sure you have a QR code for your cashapp.
Oh, and also bring a cooler with energy drinks and bottled water. People would stop by just for one of those. Get a canopy so you can work in the sun and rain, and a couple of prep tables. Fill some squeeze bottles with a homemade hot salsa for people to drizzle on, or fill little cups of picante sauce for 50¢ each to go.
