Surprisingly I've only had one Jedi character over the years.
Twi'lek, name was Maru Salaer. Padawan, never got the chance to see him knighted in the community I played him in. Soresu practitioner with a saberstaff.
Had incredible natural affinity for starfighter piloting, Force shenanigans allowed him to pull off feats that were insane for an individual of his relative inexperience.
Mother was a former indentured servant out of Hutt space that barely managed to claw herself and her children onto a Republic colony after years of effort. Gave him up the moment the Jedi detected him because she wanted a better life than she could ever possibly provide for him.
