I think you're being silly, i mean origen of alexandria, Basil the great, Gregory of Nyssa, Dionysius the aereopagite. These were all rather well educated men, and they're foundations of religious philosophy. The scriptures OBVIOUSLY aren't literal in terms of the old testament especially. They are esoteric writings that reveal and piint towards unoversal truth using the already existing myth cycle and religious schema of the area. You don't read genisis like a history book.
I think that if those "illiterate fishermen" were able to sway the opinion of some fo the most prominent greek theologians and philosophers to the point of mass conversion before it was even a legal religion, that speaks to the validity of theor experiences. Also, very bold to assume that experiential mystical knowlesge must derive from literacy.
