Classic fantasy tropes just make it easier for peopel to get into the setting. People know right away how the world works and have some basic idea of the backstory if you stick with the classics. you don't have to spend a lot of time with explaining the setting or risk confusing the players.
Plus people like stuff they recognize.
That being said I do like some artist attempt to re-imagine classical fantasy races as something sighlty new while keeping the core identity in tact.
