Anor Londo didn't fall overnight, it fell out of relevancy until it was weak enough for the Cathedral of the Deep to conquer it, and Miyazaki is literally using Imagery of the Roman Empire to signify that Anor Londo represents the Western Roman Empire and Lothric the Eastern Roman Empire, including the first King of Lothric being represented as a winged man holding a flaming scepter and his symbol being a great bird soaring in the skies
