Here's a (translated) recipe for an apple pie from an 1854 cookbook that I use:

>Peel and core a dozen or so wine apples, chop them finely, and stew them lightly in melted butter. Pour in half a glass of wine, add a handful of rinsed small raisins, some chopped lemon peel, several spoonfuls of sugar, and a bit of cinnamon. Cook the mixture, stirring constantly, until it thickens.
>Once the filling has cooled, spread a layer of it over a baked round of puff pastry, cover it with a raw round of dough or a lattice of pastry strips, brush with beaten egg, and place in the oven.

I've never tried an apple pie baked with just raw apple though. Might also be good.
