Since they used 愛, it cannot be LOVE or LV being referenced here.
In JP undertale, LOVE/LV and EXP are left untranslated and Sans just says the acronym in katakana and explains what it means.
It's not translated as 愛 in Japanese Undertale. They say "LOVE" and "LV". Flowey says "Ai" 「あい」 in hiragana to trick the player into thinking it means love as in "I love you", as a means to say "LOVE is 「あい」 which is I love you".
I'm 99% sure if this was another trick in Deltarune, they would have kept it as LOVE or even said 「あい」to make that callback more subtly. when they use 愛 , to me this is more explicit in a difference between LOVE and actual love.
