My Chinese parents once warned me about those restaurants. "Oh, they look fun, but what they actually do is take the shittiest, most deformed, most radioactive fish, and grind it up onto those conveyer belts!"
They're pretty cautious in general, and discouraged me from even trying anything with raw fish in it for a while. My first varieties of sushi were eel avocado roll, shrimp tempura, California roll, and spider roll made by the sushi lady at the local Asian (Chinese and Vietnamese) supermarket.
They also had a grudge against Japan because of Nanjing and other historic war crimes, brought over from the Chinese education system of the Deng Xiaoping-era.
Eventually they mellowed out on their own, and we even ended up visiting one of those conveyer belt sushi restaurants for the first time on one of our China family visits in 2018. Their respect for Japan also grew as their respect for China (more specifically the PRC) diminished.
