In the WWDC video they talk about unifying icons across platforms, which means getting rid of anything that sticks outside of the square on macOS since iOS doesn't allow that. For the contacts app, they moved that tabs inside of the square, which pushes the symbol off-center. However WatchOS and VisionOS still use circular icons. The new circle icon looks more like a game of Simon than an address book.
