We basically avoid anything in the head but most of the stuff below the neck is fair game. (small intestine, sweetbreads which are the endocrine gland, these things are usually entrees, liver too although it is more niche).
And of course the normie standard cuts like pic related, each of them has a different taste and temperature point.
Anyway in the OP I see different stuff like brisket and backribs, those are gonna taste very different from each other too.
