1) Press O to see all quests, go to "Suggested" tab and scroll down a bit till you see the [Life] quests. They aren't mandatory, but they teach you the basics. Also since we are on the O menu, make sure you have all quests enabled, all the yellow buttons at the bottom of the O window should be shining yellow.
2) Stable keepers sell some basic shitty gear for horses and donkeys, which may do the trick for now. If you want something a little bit better, you can rent a horse gear workshop in a city and with a NPC worker you can craft some donkey gear there. You can also check the Central Marketplace to see if other players sell some donkey gear, but since this doesn't make some profit, I doubt you will find someone selling a piece.
3) You should graduate asap. Each graduation from a season gives you a lot of rewards, most notable ones being the PEN Capotia accessories, which will be your main accessories for a while. Seasons are also a great way to try more classes that also caught your attention, and if you don't like them, at least you have a decently geared alt character to park to a world boss. Let me be clear, I'm not saying that you should rush and eat through the season tickets like a chore. Play the game at your own pace. All I'm saying is if you finish all season challenges, you have no reason to stay in season, since there are a lot of rewards after you graduate, and a lot more benefits to try more classes through your next season.
