Storm of Steel (WW1 trench warfare from a german perspective, one of the grittiest war memoirs)
Forgotten Soldier (WW2, again from the german perspective, insanely gritty)
Inside Delta Force (memoirs about Army special operations from the 80s, very influential book in my formative years, it instills in you this sense of figuring problems out on your own, I probably re-read it once a year or two years). Arguably best military memoir ever written.
Low Level Hell (memoirs of Vietnam hunter-killer helicopter crew)
Chickenhawk (Vietnam cargo helicopter pilot memoirs, less action but very immersive)
