As to the why, I dunno, the novelty of it I guess? Jenny's a character that has existed since like the second episode but has never really gotten any real focus, I just think it'd be neat if they finally did something with her for a change.
Sure, Stacy and Vanessa are objectively more interesting characters, but we see them all the time and they've gotten a ton of use, Jenny's character is still mostly unexplored, there's potential there.
