They're literally have a human face with a snout plastered on and worst it looks like a prosthetic because of how flat the lower jaw is compared to the upper jaw. Most likely done so it’s easier to animate their mouth if they have a human mouth instead of a proper mouth for their snout shape. The Khajiit incorporate a more complete feline face than them.

They also have this domestic cat type of face when they’re supposed to be these big buff people and it looks off. They look less lion like and more like domestic cats with buff bodies. They also have a refrigerator build.
