Testicles are remarkably soft but still held together well with connective tissue unless you cut them up. Some might say they're very mildly chewy. The skin on the outside is very strong and thin. I always remove the skin in a way where the meat is untouched. I puncture the skin with a knife, then put the blade in between the skin and meat to cut a larger hole. Afterwards I just put my fingers in there and I can easily separate it to where I'm left with a nice nugget like this. The taste is very mild and minerally, somewhat like an oyster. It makes sense that they call them Rocky Mountain Oysters
