No, I can make the bullets be affected by gravity but I don't think is a good idea, With all the weird stages and gravity inversions, accuracy is something the player needs, imagine that the player shoots a bullet to an enemy but instead of hitting them, it stars spinning around a planetoid, it's fun at the beginning but I think in later levels will get annoying and frustrating, that's what I feel.
