Before they started to change in the 90s, airports had only a couple of places to get food and since they were often monopolies, the prices where insanely high while the quality was terrible. When a couple of airports were renovated, one of the selling points to get the city to invest was that they'd add a food court or something similar so there would be lots of competition. Some cities like Portland made it illegal for an airport location to charge more than a location in town.
Now most modern airports have a variety of restaurants and while they're often more expensive than the same food outside the airport, it's nowhere near as exploitive as it used to be.
