When a regular pellet based weapon is fired at a Jedi, their weapons will partially deflect the bolt. However, seeing as the bolts are made up of a metal, when they meet the extreme heat of the blade, they melt and splatter.
The Mandolorians in particular would use slugthrowers and lead based weapons against the Jedi. If the splatter enters the eye of the Jedi, they could be blinded.
