The remaster looks like they deleted all the specularity masks.
If you don't know, in 3D modelling, it's common practice to create a black&white masks on top of your textures, in order to indicate how intense the highlights should be.
It's almost as if the Dark Souls remaster lost or deleted all of those masks.
