It's the consequence of Sin seeping into the World along with the curse of death being brought upon Creation as a whole due to Adam and Eve's disobedience of God and eating the forbidden fruit. He told them if they were to eat of it, they would die, and He was right, still is in fact. But due to the fact He loves us and doesn't actually wants us to die, He made it so part of the immediate judgement we were supposed to receive, that being death, was temporarily put to the said by God making it so that an animal would end up being sacrificed in our stead, due to the fact that animals, by nature, are sinless due to the fact they operate based on instincts and no on free will like us, they don't act based of knowledge of good and evil.
He made it so that the immediate judgement we deserved be postponed instead through a sacrifice. Then upon sacrificing said animal, He further used its contents to give Adam and Eve clothing and food. Although they were banished from Eden and disconnected from Him, God still cared for and looked after them.
Ultimately, they did still succumbed to the curse of death, as it is still in effect, but God used that event as a startup point to fix this entire issue we are under so that we can be saved from our own fuckup through the ultimate and final sacrifice who is Jesus Christ.

Now that I said that, I'll just answer the animal part as well and hopefully is more understandable like this. The World is entrenched in Sin and under a constant curse of death for the Creation itself as whole. People grow old, get ill and then die. Plants dry up, wither and expire. Animals are used as commodities, getting butchered for meat and goods or they kill one another. It's all part of said curse of death Creation as whole is under. How their deaths happen is irrelevant, the fact the death happens to being with is the point of it in itself. Everything in Creation as a whole is tainted by sin and death, but God works towards deliverance from it.
