There's quite a lot of differences though, the glave from the spear tree as an example doesn't have poking but it has ridiculous speed with slashing non stop and its much faster than many other spears can dish out way more damage although its not good in narrow spaces. I think my most used weapon in late game consisted of crafting glaves and then a rapier as a parryfu.
I think the game has more than enough variety when it comes to different weapon trees
