>Ep2 anakin is a violent arrogant ass who's desperate for approval. Ep3 anakin is the same but hes aged up and not trusted at all by the senior jedi who dont treat him as an equal.
Anakin was fully trusted by Windu and Yoda in Attack of the Clones. They were fully confident in sending him on a mission to protect Padme. There was a scene at the temple, where Yoda and Windu assure Obi-Wan that Anakin is ready, and arrogance is a flaw common in all Jedi. In Ep 3, Windu did not trust him, because he was put on the Council by the Chancellor. That was the reason. There was nothing about not treating him as equal. This is your headcanon. Anakin was just as violent in the show, when the situation demanded it. Just like in the movies. He was not always violent.
>It feels weird to have all that and then they trust him with an apprentice?
Not really. Again, Yoda and Mace trusted him well enough in Ep 2, and Yoda gave him a Padawan specifically, because he tried to help Anakin with his issues. He needed to learn how to let go of attachments.
>Neverminded TCS never showing core tenants like his friendship with the Chancellor.
It literally did on many occasions. Seems like you just did not watch it, or skipped 80% of it.
>TCS is a kids show and it throws out a ton of the adult content that was in the originals
Movies were never adult. All of Star Wars is for 12 year olds. Lucas said it many times.

Movies are rated PG. Same as the show. You have some different version of the movies your head, it seems.
