Honestly EVs really aren't that big of a deal.
Even in the earliest implementation of them it doesn't take more than an hour of killing Wingulls to max out your mon's EVs
Is it grindy? Sure, but honestly it's kinda worth it for that perfect Pokemon - seeing the +12s to the trained stat on each level up really gets your tailbone singing.
