Everyone knows they are technologically inferior. Soviet doctrine always accounted for these facts, one way or another.
Most of the times throughout history where American and Soviet planes fought against one another, it involved highly trained and supplied US pilots on US jets, while non-Soviets were on the Soviet jets. When actually well trained Soviet pilots were in control, the results were a lot less one-sided.

Soviet air doctrine is not about winning, it's about not losing.
