Right now its going to depend heavily on what they add in. For example, they added in more potions to scholar. Not sure what that will do with demand. The biggest issue right now is that in many regions, there's just not an economy. People are not posting materials or buying materials at a rate that's healthy for the economy. They're either hoarding it or settlements are taking everything they produce and putting it right back into the settlement. Its a big debate in the community right now on how to actually create an economy in the game, if it will happen, when, etc.

That being said, I agree with the other anon. Hunting is routinely one I hear people moan about in chat. Mainly because hunting itself seems to take more engagement than most other professions. And typically their nodes are in more inconvenient locations. So basically it takes longer to level because it takes longer to gather and overall seems like there's "less" of said resource. Fishing, from what I Understand, is only providing value through traveler's tasks right now. Fish oil is used for settlement upgrades (settlements right now is the only thing creating demand, so that determines value). But its fairly easy to farm with fishing. So as the playerbase moves into those tiers it will drop in value quickly.
